Indianapolis Colts
My father-in-law is the biggest Colts fan around -- so I made these cookies for his birthday the year after they won the Superbowl

My Wedding "Cake-tastrophe"
So here's the short version of the story:
I decided to make my own wedding cake (yes, crazy idea, but I couldn't imagine spending hundreds of dollars on something I knew I could do for a fraction of the cost!!!) Surprisingly, it turned out pretty good for my first tiered cake attempt.
I took it to the venue the night before and asked them to leave it in a cool, dry place, but not to put it in the fridge. Well, they put it in the fridge - and pulled it out 20 minutes before my ceremony. See, fondant will absorbe the moisture in the fridge, and then when it comes out into room temperature, it will 'sweat' out that moisture.
So the result was, all the colour I 'painted' on the cake started to bleed down the sides.
Luckily, I had packed a tube of icing in my bridal kit. So just minutes before my wedding ceremony, with my sister-in-law, maid of honour and groomsman helping faithfully (I need toothpicks and napkins, STAT!), I did what I could to put it back together and make it look decent.

Oh Canada! The origins of the Beaver
Meet the "original" cupcake Beaver - created in 20 minutes because I had batter left over from another cake I was making (see sparkler infused Canada Day cake below). At only 5 inches tall, I had no idea he would become a little phenomenon all on his own.
Special thanks to my friend Kevin (and former provincial colleague) for photoshopping him onto the Ontario legislature background.
This little guy was requested to celebrate when my friend Ana passed her Citizenship test
And this one was for Kyle when he got hired onto the RCMP (check out his other cake)
